French Pastry School: What was your background previous to studying pastry and what led you to pursue an education in pastry?

Shanetta Terrell:  My background previous to The French Pastry School has been pastry. I have been a cake decorator for about thirteen years in total. In thirteen years, I've only held one job that didn’t have anything to do with pastry and, ironically, it was that one job that introduced me to The French Pastry School.


FPS: What was the most surprising or eye-opening moment for you so far in the program?

ST:  The most surprising moment for me so far in the program is pumping out this great work. My finished projects have been awesome and look very professional. I could sell these cakes and make a profit; it doesn’t even look like student work.  I am very pleased with what I have learned and hope to go many places with the skills that I have obtained.  For the Love of Chocolate helped me attend and I am so grateful for what I have learned.


FPS: What are your plans for after graduation?

ST:  My plan following graduation is to start looking for employment and possibly other volunteer or internship opportunities. I'm looking for something with stability so I can spend more time with my son.



FPS: Where do you see yourself in five years? Where do you hope to be?

ST:  In five years, I see myself starting my own business. I want to gain more experience before I begin to work towards owning my own business. In five years, I should have definitely mastered some skills to help me get established and well-known. My other goal is to be a pastry champion, so I really need to work hard on my craft.



FPS: In the future, what will you look back on and remember most vividly about your time as a student at The French Pastry School?

ST:  In the future I will look back on and vividly remember how I have developed and grown as a person and the skills I have obtained. I kept doubting myself and wondering if I could really do this throughout this whole process. I put limitations on myself because I was more scared to succeed than to fail. When I realized I was the only person holding me back, I began to see a new and more confident person emerge.
