The French Pastry School: What was your background previous to pastry, and what led you to pursue a pastry education?
Katie Lacock: Prior to attending The French Pastry School, I was working as a choreographer for a musical theater company in Orange County, California. I have always been interested in baking for friends and family and was encouraged to pursue baking professionally. I eventually opened my own online custom cupcake and cookie company. After many requests for cakes and a lot of research I decided to move to Chicago to attend the L’Art du Gâteau program to expand my knowledge.
FPS: What are your plans following graduation?
KL: Following graduation I plan to return to California to reopen and expand my bakery. I plan on using my knowledge I’ve gained at The French Pastry School to update my menu to include all different types of cakes.
FPS: Where do you see yourself in five years? Where do you hope to be?
KL: In five years, I hope my business has been successful enough that I am able to open a storefront. I want to use all the skills and techniques that I have acquired at The French Pastry School to make my mark on the cake industry.
FPS: In the future, what will you look back on and remember most vividly about your time as a student at The French Pastry School?
KL: I think I will look back and mostly remember all the people I have met. It’s amazing how people from all across the world can come together and bond over the love of cake and pastry. The passion that the chef instructors and my fellow students have for pastry will always inspire me to keep pursuing my dreams. I feel so honored to be able to say I attended the L’Art du Gâteau program at The French Pastry School.
