Cindy Soto attended the January 2012 session of L’Art de la Pâtisserie after being awarded a scholarship from For the Love of Chocolate Foundation. Soto had a background in retail and fashion design and, when she found herself between jobs, a friend offered her a baking position at her catering business. While there, she developed what she calls a “desire to create recipes and continue to work on them until they’re perfect.”
This attitude helped her realize her need to further develop her skills and led her to The French Pastry School where she received a certificate in Baking and Pastry Arts. Soto wishes to gain even more practical experience by working in fine dining restaurants so she can open her own business within five years. Her concept is to serve her customers modern interpretations on classic childhood and family favorites.
Her time at The French Pastry School gave her inspiration to accomplish her goals. “The Chefs showed absolute dedication on a daily basis,” Soto explained. “They portrayed professionalism that I will continue to carry with me throughout my career. Their enthusiasm for what they do inspired me to challenge myself and not to become complacent: pastry is an ever-changing art.”
